Peppermint Brownies
5 large eggs
11/2 cup Butter
3 cups sugar
1 tablespoon vanilla extract
2 cups flour
1 cup unsweetened cocoa
1 teaspoon salt
24 peppermint patties

  1. Preheat oven to 350o.  Grease bottom and sides of a 13x 9 x 2 inch pan
  2. Beat eggs. Add sugar. Butter, and vanilla beat and mix with an electric mixer until well mixed.
  3. In another bowl combine flour, cocoa, baking powder, and salt.  Fold dry ingredients into the egg mixture. and stir well.
  4. Reserve 2 cups of batter.
  5. Spread remaining batter in bottom of prepared pan.
  6. Remove peppermint patties from wrappers and break in half. Space patties evenly in a single layer on top of pan.
  7. Spread the reserved batter over patties.
  8. Bake 50 minutes or until brownies begin to pull away from sides of pan.
  9. Cool and serve or for a real treat try warm with ice cream.

 

Fantasy Ice Cream
1 cup chocolate sandwich cookies, crumbled.
1 cup your favorite chocolate candy, chopped.
1 quart vanilla ice cream, softened.
4 ounces whipping cream

  1. In a medium bowl or blender, combine ice cream and whipping cream.  Add crumbled cookies and chopped candies and stir until blended.
  2. Cover and freeze at least 30 minutes before serving.
