Peppermint Brownies
5 large eggs
11/2 cup Butter
3 cups sugar
1 tablespoon vanilla extract
2 cups flour
1 cup unsweetened cocoa
1 teaspoon salt
24 peppermint patties
- Preheat oven to 350o. Grease bottom and sides of a 13x 9 x 2 inch pan
- Beat eggs. Add sugar. Butter, and vanilla beat and mix with an electric mixer until well mixed.
- In another bowl combine flour, cocoa, baking powder, and salt. Fold dry ingredients into the egg mixture. and stir well.
- Reserve 2 cups of batter.
- Spread remaining batter in bottom of prepared pan.
- Remove peppermint patties from wrappers and break in half. Space patties evenly in a single layer on top of pan.
- Spread the reserved batter over patties.
- Bake 50 minutes or until brownies begin to pull away from sides of pan.
- Cool and serve or for a real treat try warm with ice cream.
Fantasy Ice Cream
1 cup chocolate sandwich cookies, crumbled.
1 cup your favorite chocolate candy, chopped.
1 quart vanilla ice cream, softened.
4 ounces whipping cream
- In a medium bowl or blender, combine ice cream and whipping cream. Add crumbled cookies and chopped candies and stir until blended.
- Cover and freeze at least 30 minutes before serving.
